We all know what most restaurants think of dishwashers. Often underpaid, maybe undocumented disposable workers, considered unskilled and uncared for.
But for one dishwasher, who has tirelessly worked for 13 years, kept a strong work ethic and respected attitude he has been paid with the ultimate respect.
Gambian immigrant, Ali Sonko, has been made a partner in one of the world’s highest ranked restaurants, Copenhagen’s two Michelin Star Noma.
Sonko has been a part of the team for 13 years and has built up a respect on par with the head chef. He has been as much of the team as any and a prime driver in the atmosphere of the restaurant’s kitchen. He has for a long time been amongst it’s highest paid and is clearly respected by all whom he crosses.
He has never clamoured to climb the ladder because he has always been given equal respect and the importance of his job always recognised.
